After working his way through some of the more prominent restaurants in Canada, Cecil Cramer is proud to announce that his cooking skills are available for hire. Currently he is offering an interactive catering service which will include a menu customized specifically for you and your guests, on site food preparation and cooking lessons, and, not to be overlooked, an unforgettable feast of delicious, mouth-watering food.
Menus can range from simple hors d'oerves and bite size snacks to multi-course sit down dinners.
Like most Chefs, he started out as a wide eyed youngster washing dishes, peeling potatoes and doing whatever it was in order to assist with the food service operation. While in Vancouver, Cecil's eyes were opened to the world of fine cuisine. Over the past decade, his palate and talents were honed alongside such recognized Chefs such as Jamie Kennedy, Marc Thuet, Anthony Walsh, Bob Bermann and Barbara Gordon. Citing Chef Rob Clarke of Canada's internationally recognized 'C Restaurant' www.crestaurant.com as his most valuable mentor and inspiration, he is now prepared to dive headfirst into the world of cuisine armed with an amazing arsenal of skills. The three plus years of working under Chef Clarke provided Cecil with countless opportunities, from catering inside the Vancouver Aquarium to accompanying Rob and James Barber ( The Urban Peasant) to the Epcot Centre Food and Wine festival, and only served to stoke the fires of passion for food within him.
One aspect of his cooking philosophy that is near and dear to his heart is the notion of utilizing seasonal local organic ingredients. Being immersed in the progressive food scene in Vancouver for the 90's, he was enlightened to the importance of using these products.
"Quality of life will not be achieved by 'diets'. It can only be accomplished with a proper diet. You will not believe how much ones health and well being can be improved by recognizing the benefits of knowing what you are eating".
Although he will happily provide you with non-organic product, his connections to the Ontario organic community allow access to some of the freshest, most wholesome products available. He promises that his food will be real and authentic, prepared with love, attention and purity.
Some of his career highlights include : assisting Bruno Born in launching a new restaurant (Sausi's), catering the first International Conference on Food and Agriculture ( U.B.C. 1997), and cooking for such stars as Tina Turner, Dianna Krall, Elvis Costello, Sarah McLachlan and Gillian Anderson, to name a few.
Feeling as if his culinary knowledge has a solid foundation, he is "hanging up his shingle" and offering his services to the public.
"Allow me to bring my years of experience to your door. Although I have been exposed to many cuisines of the world, classic French technique is closest to my heart. The respect for the ingredient is a philosophy that allows the true essence of the food to emerge. Having said that, whichever menu we conjure up together, there will certainly be magic @ your table".
Currently entertaining parties ranging from 8 to 40 guests.
